Joel Griffin is from Madison, Connecticut, a sleepy beach town with only one redeeming quality: its food. While living in CT, he worked in a local clam shack restaurant that served lobster rolls and fried seafood. In 2017, Joel moved down to New Orleans to attend college, but immediately noticed a problem: there were no lobster rolls or New England style seafood. The few times a year Joel would return home to visit his family, the first thing he would do was buy a lobster roll. Finally, after living in New Orleans for 4 years, Joel said enough was enough and decided to take matters into his own hands. In October 2021, Joel grabbed a pop-up tent, some cooking equipment and started Joel’s Lobster Rolls. The concept proved itself effective, so much so that in December of 2022, Joel upgraded to a food truck. He has been popping up all over New Orleans, introducing his hometown food to the city.
